“Het kroonjuweel van de avond is de masala soya chaap. Gemarineerde soja in kruidige saus, dat zijn vijf woorden. Maar hier vertellen die woorden een verrukkelijk en meeslepend verhaal van smaak, kunde, specerijen, traditie en hartigheid. Meesterlijk, zeker wanneer er nog wat krokante butter naan (brood) is voor de laatste moleculen saus.”
